Don’t be fooled by the picture, that was just to grab your attention. A child happily eating broccoli is a dream, a far-fetched one. Even the child in the picture could be mocking his parents for presenting a plate full of vegetables, expecting him to eat it all happily. Broccoli has been a source of 98% (or so it seems the way parents go on about it) of dinnertime tantrums world over, and you are not alone in trying to figure out ways to make your child eat something nutritious for once. Broccoli is important in your child’s diet because it aids in digestion, is an anti-inflammatory agent and also boosts brain development. Here are other health benefits of broccoli. Now the only question is, how do you make you child eat it, so here you go: 1. Broccoli soup: Kids love soup, my guess is because they don’t need to chew anything in it. Anyway, you can prepare broccoli soup, strain out any traces of vegetables in it and give it to your child. You can also add croutons to the soup to make it more filling. 2. Broccoli pizza: Honestly, this is the only way I can get myself to eat broccoli. Take your homemade pizza base, slather some sauce (whichever your child likes), top it up with chopped broccoli and other toppings of your choice, sprinkle grated mozarella cheeze and cook it the way you would cook any pizza. Kids love pizza and all the cheese will mask the broccoli taste. Win-win! 3. Broccoli pasta: Try this healthy wholewheat pasta with white sauce recipe as directed, but with a quarter cup of chopped broccoli. Genius, right! 4. Broccoli sandwich: From the recipe above, prepare the white sauce as directed. Add a quarter cup of chopped broccoli and 2 tablespoons of grated cheese. Let it simmer till you get a sauce-like consistency. Now you can easily spread this on wholegrain bread, toast in a panini-maker and let your kids relish the delicious sandwich. Here you go parents!
